Blueberry Breakfast Cookies with Collagen (No Banana)

Some days you just want a cookie for breakfast and don't worry, I got you! These blueberry breakfast cookies are made without banana, take less than 10 minutes of effort and include fiber and protein to help keep you full!
Scoop in ¼ cup dough mounds and bake at 325 for 14-17 minutes.Preheat the oven to 325 °F and line two cookie sheets with parchment paper or a silicone liner.
In a large bowl, mix together the ½ cup almond butter, ¼ cup maple syrup, 2 eggs, 1 tbsp vanilla extract, 1 tsp ground cinnamon and ¼ tsp salt until combined.
Stir in the 2 cup rolled oats, ½ cup ground flaxseed, ½ cup collagen powder and 2 tbsp chia seeds until evenly mixed. The dough will be quite thick.
Fold in the ⅔ cup blueberries.
Portion the cookie dough out onto the prepared cookie sheets using about ¼ cup of batter per cookie. The cookies will not spread much so lightly press them down and shape into a cookie shape. Bake for 14-17 minutes until the centres appear set and the edges are just starting to brown.
Cool on the cookie sheet for 5 minutes before moving to a cooling rack to cool completely. Enjoy or see below for storage directions.

StorageThese cookies are perfect for prepping ahead as an on-the-go breakfast! Allow them to cool completely before packaging. They can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. You can eat them straight from the fridge or microwave them for a few seconds to heat them up (the centres are chewier when warm). From the freezer, microwave for 30-45 seconds until thawed.Omitting the CollagenIf you would prefer to make these without the collagen powder, you can add an additional ¼ cup of oats. The texture changes slightly but is still tasty. Note that this also changes the nutritional estimate for the cookies.
