Toast the bread in the toaster until it is just lightly golden so it’s sturdy enough for the toppings but still easy to bite into.
2 slices sprouted grain bread
While the bread is toasting, mash the avocado with the cottage cheese and seasonings in a small bowl with a fork, leaving some chunks for texture.
½ large ripe avocado, ½ cup cottage cheese, ⅛ teaspoon fine sea salt, ⅛ teaspoon black pepper, ⅛ teaspoon granulated garlic
Split the mashed avocado mixture between the toasted slices and spread it on top.
Add any additional toppings you'd like and enjoy!
Notes
*I used sprouted grain bread as it is higher in fiber and protein (plus I love the way it tastes!) and the nutrition is calculated based on this bread.Make Ahead/Storage: I recommend making this toast fresh. If you have leftovers, you could store them in the refrigerator for a day and eat it cold the next day but the texture won't be the same.
