This tomato avocado toast is an upgraded breakfast that's doable on a busy morning. With a combo of avocado, tomato, bacon and white beans, it is full of flavor plus protein and fiber to keep you full.
If your bacon is not yet cooked, cook two slices using your desired method and to your preferred doneness. Cut each slice in half.
2 slices bacon
Toast the bread in the toaster. I recommend just lightly golden so it’s sturdy enough for the toppings but still easy to bite into.
2 slices sprouted grain bread
While the bread is toasting, mash the avocado in a small bowl with the seasonings and white beans until mostly smooth leaving some chunks for texture.
½ large ripe avocado, ½ cup white beans, ¼ teaspoon fine sea salt, ¼ teaspoon garlic powder, ¼ teaspoon black pepper
Divide the avocado mixture between the two slices of toast and spread evenly.
Top each toast with a slice of bacon and tomato.
2 slices bacon, 1 medium tomato
Sprinkle with a pinch of salt and add any additional toppings you like. Enjoy!

Make Ahead/Storage: I highly recommend making this toast fresh. If you have leftovers, you could store them in the refrigerator for a day and eat it cold the next day but the texture won't be the same.*I like to use sprouted grain bread as it is higher in fiber and protein (plus it's chewy and tastes delicious!) and the nutrition is calculated based on this bread.
