This almond butter banana toast is quick and delicious. And when you pair it with my tips for making it a balanced breakfast, it's as satisfying as it is simple!

Toast is a breakfast that I never tire of. With the right toppings, like you might find on my cottage cheese pizza toast, it always hits the spot!

This almond butter banana toast is one of my go-to combos. It's simple, yet satisfying and the perfect mix of fruity and nutty.

Like my smoked salmon avocado toast, it is proof that toast is anything but boring.

And with a few easy sides (I share my favorite ideas below), you can turn it into a balanced, filling breakfast that keeps you full all morning.

Ingredients and Substitutions

  • Sprouted Grain Bread- I typically opt for sprouted grain breads as they often contain more micronutrients, protein and fiber than other breads but use whatever you prefer.
  • Almond Butter- Crunchy or smooth will work.
    • Substitution: Feel free to make this toast with another nut or seed butter. Peanut butter banana toast is also a delicious combo!
  • Banana- Use a banana that is as ripe as you like best. I personally prefer it to be yellow with just a few brown spots (which is what I use for banana chia overnight oats too) but you do you.
  • Fine Sea Salt- I find that just a pinch really brings the flavor together but feel free to skip it.

My Tips for Almond Butter Banana Toast

  • Use the banana ripeness you love. I personally prefer my bananas yellow with just a couple of spots, and that's what I use for my breakfast banana split, but this toast will taste best to you depending on how you most like bananas.
  • Make it satisfying. Pair your toast with a source of protein and fiber (see some ideas in the notes of the recipe card) to turn it into a filling, balanced breakfast that keeps you full all morning long.

Ingredients

  • 1 slice sprouted grain bread * (or bread of choice)
  • 1 tablespoon almond butter
  • ½ banana sliced
  • pinch fine sea salt

Instructions

  • Toast the bread in the toaster to your desired doneness.

  • While the bread is toasting, slice the banana.
    ½ banana

  • Once toasted, spread almond butter over the toast.
    1 tablespoon almond butter

  • Top with the sliced banana.

  • Sprinkle with a pinch of salt and enjoy!

Notes

*I typically use sprouted grain bread as it is higher in fiber and protein (and it's chewy and tastes delicious!) and the nutrition is calculated based on this bread.
Make Ahead/Storage: I recommend making this toast fresh. If you have leftovers, you could store them in the refrigerator for a day and eat it cold the next day but the texture is best fresh (and the bananas may brown).
Make it a Balanced Breakfast: There's something about toast for breakfast that just hits the spot. But, on it's own, this toast may not be a filling enough breakfast. I made the recipe for just one slice but feel free to double it if that makes it better breakfast option for you. 
Personally, I like to pair one slice of this loaded banana almond butter toast with some additional quick and easy sides for extra protein and fiber to help keep me full all morning. Here are some ideas that you can try!
Extra Protein:
  • ½ cup Greek yogurt
  • ½ cup Cottage cheese
  • 2 boiled eggs
  • 1 Apple Pork Sausage Patty
Extra Fiber:
  • 1 cup mixed berries
  • 2 kiwifruit
  • ¼-1/2 cup chia pudding
