Nessy's Note

While I try to keep breakfast recipes (like these chocolate banana overnight oats) as simple as possible around here, I can't deny that taking an extra minute or two for presentation can seriously elevate the whole morning.

Case in point? My breakfast peanut butter banana split.

Sure, I could just toss everything into a bowl (and do many mornings when I make this banana yogurt bowl), but something about seeing how pretty it looked made breakfast feel a little more special. And I think it even tasted better.

So here's to romanticizing breakfast and busy mornings.

Ingredients and Substitutions

  • Banana- This definitely tastes best with a ripe banana (yellow but not yet spotty) for max banana flavor and sweetness while not yet being mushy.
  • Greek Yogurt- Like in Greek yogurt overnight oats, I use whole milk or 2% for the best flavor and creaminess but non-fat works if you prefer.
    • Substitution: Any plain yogurt (balkan, skyr, etc.) works but note that the protein content and thickness vary.
  • Peanut Butter- In my humble opinion, peanut butter + banana is a perfect match (as this PB Banana Protein Smoothie proves). I used natural style smooth but crunchy would also be great here!
    • Substitution: If you prefer to skip the PB flavor, you can simply leave it out.
  • Flaxseed- This is my trick for a yogurt banana split that holds its shape. Adding some ground flaxseed thickens the yogurt (it does the same thing for a cookie dough yogurt bowl) so that it can be scooped between the banana slices and it also adds a bit of extra fiber to the recipe.
    • Substitution: Chia seeds could work but the yogurt filling will be less smooth that way. You can leave the flaxseed out also.
  • Toppings- Like when making a breakfast yogurt bowl, the toppings are the fun part! I opted for some sliced strawberries, chopped peanuts and dark chocolate but you can definitely switch these up with other berries, nuts or seeds.

Tips for Perfect Breakfast Banana Split

  • Use a ripe (but not over-ripe) banana. A yellow and nearly but not quite spotty banana adds sweet flavor while still being sturdy enough to slice in half.
  • Don't skip the flaxseed. Stirring ground flaxseed into the yogurt helps to thicken it and give it a more-pudding like consistency for spooning into the centre of the banana.
  • Sweeten to taste. I usually don't add any sweetener but I recommend tasting the filling before adding it to the banana and adding some honey or maple syrup if you prefer.

Ingredients

  • ½ cup plain Greek yogurt
  • 2 tablespoon peanut butter
  • 1 tablespoon ground flaxseed
  • sweetener of choice to taste
  • 1 banana ripe

Toppings

  • 2 strawberries sliced
  • 1 tablespoon peanuts
  • 1 tablespoon dark chocolate chopped (I used 85% cacao)

Instructions

  • In a small bowl, stir together the Greek yogurt, peanut butter and ground flaxseed. Taste and add sweetener if desired.

  • Peel and slice the banana in half lengthwise. Place both halves into a shallow dish.

  • Top with the sliced strawberries, peanuts and chocolate (or your toppings of choice).

Notes

Make Ahead: You can prepare the yogurt mixture up to 3 days in advance. The strawberries can also be sliced and the nuts/chocolate chopped up to 3 days in advance. Store the strawberries and yogurt in the refrigerator.
Leftovers: I highly recommend enjoying this recipe fresh as the banana will start to brown once sliced.
