If spring was a breakfast, it just might be these blueberry lemon overnight oats.
In the same way that cinnamon overnight oats make a morning feel cozy, these are bright, fresh and bring a little sunshine to the start of your day.
The creamy oats, juicy blueberries and hint of lemon make for a refreshing breakfast. And the protein and fiber help satisfy you all morning long.
Ingredients and Substitutions

- Rolled Oats- These may be called old-fashioned oats or large flake oats. I personally prefer their texture in overnight oatmeal.
- Greek Yogurt- This makes the overnight oats high protein without needing protein powder and provides the liquid to soften the oats.
- Substitution: These should work with any type of plain yogurt but note that protein content will vary.
- Honey- I find that a touch of honey provides extra sweetness and nicely complements the lemon and blueberry flavors. I kept the amount added on the low end so you can add more if needed to taste.
- Substitution: Maple syrup or your sweetener of choice can be used instead or it can be left out depending on how sweet your blueberries are.
- Lemon (juice + zest)- This brings the lemon flavor to these oats. I highly recommend using a fresh lemon and including both juice and zest so that the flavor is strong enough to be tasted.
- Substitution: Bottled lemon juice can be used in a pinch (and the zest can be omitted) but the flavor is much better with fresh.
- Blueberries- Unless fresh blueberries are in season, I prefer using frozen blueberries (like I do in this blueberry yogurt bowl) and thawing them to make this recipe extra simple. When they thaw, they get juicier and seep into the oats for extra flavor.
- Substitution: Try this recipe with any fresh or frozen berries, such as strawberries, raspberries or blackberries. Or check out my berry chia overnight oats!
- Chia Seeds- These help to thicken the oats and add a some of the fiber.
- Substitution: Ground flaxseeds can be used or they can be left out.
- Sea Salt- A pinch balances out the flavors.

My Notes for the Best Blueberry Overnight Oats
- Meal prep for the week. This blueberry lemon overnight oatmeal lasts up to 5 days in the fridge so you can make a batch on Sunday and have breakfast ready all week.
- Adjust the consistency. If the oats thicken too much overnight for your liking, you can stir in a splash of milk (or water) before serving.

Blueberry Lemon Overnight Oats
Equipment
- 1 jar or container with lid (at least 10 oz/300mL in size)
Ingredients
- ¾ cup plain Greek yogurt (I prefer 2% for a creamier texture but any type will work)
- ½ tablespoon honey (or maple syrup)
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
- ⅛ teaspoon fine sea salt
- ⅓ cup old-fashioned rolled oats (large flake)
- 1 tablespoon chia seeds (or ground flaxseed)
- ¾ cup blueberries divided
Instructions
- Add the Greek yogurt, honey, lemon and sea salt to your jar or container and stir well until fully combined.¾ cup plain Greek yogurt, ½ tablespoon honey, ½ teaspoon lemon zest, ⅛ teaspoon fine sea salt, 1 tablespoon lemon juice

- Stir in the rolled oats, chia seeds and ½ cup of blueberries until evenly mixed. Top with the remaining ¼ cup of blueberries.⅓ cup old-fashioned rolled oats, 1 tablespoon chia seeds, ¾ cup blueberries

- Let the oatmeal sit in the fridge for at least 4 hours (overnight is best for optimal texture).

- That's all! In the morning, enjoy your filling breakfast as you get all ready for your busy day.

I love the blueberry/lemon flavor! Do you know if you can make this with regular plain yogurt ? I usually have both in my refrigerator and didn't know if the plain yogurt would work the same as Greek.

Hi Annette, this recipe does work well with regular yogurt too! If you want thicker oats, you can reduce the yogurt to 2/3 cup but it isn't necessary- just depends on the texture you prefer.
