So when it comes to what to top your breakfast toast with, this pizza-inspired cottage cheese version is always a winner.

Rather than using marinara, I keep it simple with a quick, flavor packed tomato base that helps this hold together wonderfully.

Then it's loaded up with creamy cottage cheese, sun-dried tomatoes and basil for pizza vibes in a high protein, high fiber breakfast form.

Ingredients and Substitutions

  • Sprouted Grain Bread- I typically opt for sprouted grain breads for toast (like this peanut butter avocado toast) as they often contain more micronutrients, protein and fiber than other breads but use whatever you prefer.
  • Tomato Paste- Rather than marinara sauce, I like to use this with spices for a flavor packed but thicker layer that helps it to be better assembled.
    • Substitution: You can make this with marinara sauce if you prefer.
  • Dried Herbs + Granulated Garlic- Mixed with the tomato paste, this gives the toast it's "pizza sauce" base.
  • Sea Salt- Adjust to taste.
  • Cottage Cheese- A key ingredient in our cottage cheese toast, this adds protein and creamy, cheesy flavor.
  • Sun Dried Tomatoes- Dried or packed in oil (and drained) will work.
  • Fresh Basil- For a bit of garnish and extra flavor.
    • Substitution: Dried basil (around ¼ teaspoon) can be used or it can be left out.
  • Extra Virgin Olive Oil- Just a drizzle brings it all together but it can be skipped if needed.

Tips for the Best Cottage Cheese Pizza Toast

  • Use tomato paste. Rather than marinara sauce like in most recipes, I like using tomato paste with spices because it is rich, flavorful and holds together a bit better.
  • Experiment with toppings. This recipe is delicious as is but feel free to get creative. Hot honey and pepperoni are popular variations of this viral toast.
  • Choose a sturdy bread. I like to use sprouted grain bread but any bread you like could work as long as it is sturdy enough to hold up to the toppings (this toast is loaded up!).

Ingredients

  • 2 slices sprouted grain bread * (or bread of choice)
  • 2 tablespoon tomato paste
  • ⅛ teaspoon salt
  • ⅛ teaspoon dried herbs such as oregano, basil or parsley
  • ⅛ teaspoon granulated garlic
  • ⅔ cup cottage cheese
  • 2 tablespoon sun dried tomatoes chopped
  • 8 leaves fresh basil or ¼ teaspoon dried
  • 1 teaspoon extra virgin olive oil

Instructions

  • Toast your bread until just golden.
    2 slices sprouted grain bread

  • Spread the tomato paste evenly over each slice of bread and sprinkle evenly with the spices.
    2 tablespoon tomato paste, ⅛ teaspoon salt, ⅛ teaspoon dried herbs, ⅛ teaspoon granulated garlic

  • Top each slice with ⅓ cup cottage cheese. Garnish with the sundried tomatoes, basil and a drizzle of olive oil. Enjoy!
    ⅔ cup cottage cheese, 2 tablespoon sun dried tomatoes, 8 leaves fresh basil, 1 teaspoon extra virgin olive oil

Notes

*I typically use sprouted grain bread as it is higher in fiber and protein (and it's chewy and tastes delicious!) and the nutrition is calculated based on this bread.
Make Ahead/Storage: I recommend making this toast fresh as the texture is best but if you have leftovers, you could store them in the refrigerator for a day and eat it cold the next day.
If you want to get a head start on it, you can mix the spices with the tomato paste ahead of time.
