Who says breakfast on a busy morning can't feel a little fancy? This peanut butter breakfast banana split is simple, satisfying plus packed with protein and fiber.
In a small bowl, stir together the Greek yogurt, peanut butter and ground flaxseed. Taste and add sweetener if desired.
½ cup plain Greek yogurt, 2 tablespoon peanut butter, 1 tablespoon ground flaxseed, sweetener of choice
Peel and slice the banana in half lengthwise. Place both halves into a shallow dish.
1 banana
Spoon the yogurt mixture into between the banana halves.
Top with the sliced strawberries, peanuts and chocolate (or your toppings of choice).
2 strawberries, 1 tablespoon peanuts, 1 tablespoon dark chocolate

Make Ahead: You can prepare the yogurt mixture up to 3 days in advance. The strawberries can also be sliced and the nuts/chocolate chopped up to 3 days in advance. Store the strawberries and yogurt in the refrigerator.Leftovers: I highly recommend enjoying this recipe fresh as the banana will start to brown once sliced.
