This chocolate baked yogurt is a high protein, high fiber breakfast that is made with simple ingredients. Because what could be better than starting the day with chocolate?
Preheat the oven to 350 °F and lightly grease a 12 oz oven safe dish or ramekin.
In the ramekin, whisk together the yogurt, egg + egg white, maple syrup, cocoa powder, flaxseed and salt until well combined.
Bake for 35-40 minutes until the centre is set. Remove from the oven and allow to cool on a wire rack for one hour before moving to the refrigerator to cool completely.
Enjoy! I recommend topping with some berries or nut butter.
Notes
Make Ahead and Storage: This baked yogurt tastes best chilled (it feels kind of like cheesecake!) and so it is best made in advance. Store, covered, in the refrigerator for up to 4 days. Multiple Servings: This recipe is written as a single serve but if you want to prepare a big batch at once, you can 4x the recipe (change the servings to 4 at the top of the recipe card and it will automatically calculate it) and bake it in a 9x9 inch baking dish. The bake time may increase to about 45-50 minutes. You can also just prepare multiple single serve ramekins at once if you have multiple to bake it in.
