Nessy's Note
I'm on something of a never-ending quest to find new ways to start the day with chocolate. But in a way that actually feels good and keeps you full until lunch, like these banana chocolate overnight oats do.
The latest chapter of that journey is this chocolate baked yogurt. It is made with a handful of wholesome, high protein ingredients (like this chocolate smoothie is) and the texture reminds me of cheesecake. For breakfast.
And, since it tastes best when it is made ahead of time, it is a great option for prepping ahead of time for busy mornings.

Ingredients and Substitutions

- Greek Yogurt- The base for baked yogurt. I like to use Greek yogurt (as I do in Cookie Dough Overnight Oats) as it is thick and allows this to set nicely as well as being high protein.
- Substitution: Another thick style of yogurt such as skyr will work but I do not recommend using a thin or Balkan style of yogurt.
- Egg + Egg White- One egg wasn't quite enough and two was too much for this recipe so I settled on this combo for optimal texture. If you want to skip the egg white, reduce the yogurt to ½ cup.
- Maple Syrup- For sweetness. As written, it is not overly sweet but you can add a bit more (up to 2 tablespoons total) if you would prefer it to be sweeter.
- Substitution: Honey or another sweetener of choice can be used.
- Cocoa Powder- This brings the chocolate flavor (like it does for chocolate baked oats). Don't leave it out if you want chocolate baked yogurt.
- Ground Flaxseed- This helps to thicken and bind the baked yogurt (and adds a bit of fiber too!).
- Substitution: You can substitute with flour or cornstarch.
- Salt- Just a pinch brings the flavors together.

My Notes for the Best Chocolate Baked Yogurt
- Use Greek Yogurt. For best texture, Greek yogurt (or another thick yogurt such as Skyr) is essential and allows this to set properly.
- Let it cool. The baked yogurt continues to set while it cools and honestly tastes better chilled.
- Finish with toppings. While it tastes good on its own, it tastes great topped with something like peanut butter or fresh berries.
