A crispy, melty feta crust takes this avocado toast to the next level. Topped with hot honey and ready in minutes, it’s an easy breakfast for a busy morning that feels anything but ordinary.
Scoop the avocado into a bowl and mash, leaving a few chunks for texture.
½ large ripe avocado
Lightly toast the bread. You can either use the toaster or the skillet you'll be using for the feta.
2 slices sprouted grain bread
Heat a non-stick or well-seasoned skillet over medium. Lightly butter or grease and then sprinkle the crumbled feta in two toast-sized piles. Cover the pan and cook for 1-2 minutes until the feta begins to melt.
2 oz feta cheese
Gently press a slice of the toasted bread over each mount of feta. Cook uncovered for 1-2 additional minutes until the cheese is starting to become golden and crispy.
Flip the feta toast onto a plate, feta side up. Spread the mashed avo evenly on each slice and drizzle with hot honey.
2 teaspoon hot honey
Add any additional toppings you'd like and enjoy!

*I like to use sprouted grain bread as it is higher in fiber and protein (plus it's chewy and tastes delicious!) and the nutrition is calculated based on this bread.No hot honey? You can use regular honey (and add some chili flakes if you'd like) or leave it out altogether.Make Ahead/Storage: I highly recommend making this toast fresh. If you have leftovers, you can store them in the refrigerator for a day and eat it cold the next day but the texture just isn't quite the same.
