Think of this avocado toast as its sophisticated cousin. Crispy, melty feta seared right onto bread, topped with creamy mashed avocado and finished with a drizzle of hot honey. It's seriously the perfect balance of salty, sweet and spicy if I do say so myself.
But although it might seem fancy (like smoked salmon scrambled eggs), it's surprisingly simple to make and offers a fairly balanced source of protein and fiber. Perfect for busy weekday mornings- especially when you want something that feels a little special to make getting up just a bit easier.
Ingredient Notes and Substitutions

The amounts needed can be found in the recipe card, but here’s a quick summary of the key ingredients and substitution options:
- Bread- In my post on making higher protein avocado toast, I talk about using a sprouted grain bread or a whole grain sourdough for added fiber and protein and that is what I typically use for this recipe (and what the nutrition is calculated based on). However, you can use what you love or have on hand.
- Avocado- A ripe avocado that mashes easily is key for tasty avocado toast (as it is for tomato avocado bean toast). Look for one that’s brown on the outside, gives a bit when pressed (but isn’t squishy- that means its too ripe) and is bright green inside.
- Feta- Crumbled feta melts and crisps up in the skillet in a unique way (if you don't have feta, check out this peanut butter avocado toast instead!). I recommend buying block feta and crumbling it yourself for best results.
- Hot Honey- This chile-infused honey adds a sweet-spicy flavor dimension that pairs amazingly with the creamy avocado and crisp salty feta.
- While it has become trendy and is found in most grocery stores, if you can't find it, you can use regular honey or make your own hot honey.
- Optional Toppings- I try to make my recipes as simple (yet delicious) as possible for busy mornings, but if you're feeling fancy, you can add all sorts of toppings to take this toast up a notch.
- Some ideas: sprouts, sliced tomato, chili flakes, roasted pumpkin seeds or a fried egg (which is a great option if you want to boost the protein as well!).

My Best Tips for Avocado Feta Toast
- Use ripe avocados. Look for an avocado that gives slightly to gentle pressure and has a darker skin. When cut, it should be bright green and mash easily.
- Up the protein. While this recipe already has a modest amount of protein, it tastes incredible topped with a couple of fried eggs (which brings the protein up to 35 grams).
- No hot honey? This toast is also amazing with regular honey drizzled on top! You can sprinkle a few red pepper flakes on for a bit of heat if you'd like.
- Perfect the crispy feta. Crispy feta is unreal when it turns out right, but I had a lot of trials for this recipe where it was kind of a flop... However I learned these key tips that I highly recommend following:
- Get the heat right and don't rush it. Too hot and the feta can burn before it crisps; too low and it won't brown properly. Medium heat works best.
- Cover. Trapping some steam helps the feta to melt rather than burn in the first couple of minutes.
- Prevent sticking. Use a quality non-stick or seasoned pan and adequate butter/oil.
This avo toast is best fresh and only takes a few minutes to assemble. I highly recommend making it just before you plan to eat it.
This recipe is also incredible with regular honey (you can add some chili flakes for heat if you would like) or without any honey at all. While the honey does take it up a notch, I've made the feta avocado toast countless times without it.

Feta Avocado Toast with Hot Honey
Equipment

Ingredients
- 2 slices sprouted grain bread * (or bread of choice)
- ½ large ripe avocado
- 2 oz feta cheese
- 2 teaspoon hot honey
Optional Toppings:
- tomatoes
- sprouts
- flaky sea salt
- red pepper flakes
- fried egg
Instructions
- Scoop the avocado into a bowl and mash, leaving a few chunks for texture.½ large ripe avocado

- Lightly toast the bread. You can either use the toaster or the skillet you'll be using for the feta.2 slices sprouted grain bread
- Heat a non-stick or well-seasoned skillet over medium. Lightly butter or grease and then sprinkle the crumbled feta in two toast-sized piles. Cover the pan and cook for 1-2 minutes until the feta begins to melt.2 oz feta cheese

- Gently press a slice of the toasted bread over each mount of feta. Cook uncovered for 1-2 additional minutes until the cheese is starting to become golden and crispy.
- Flip the feta toast onto a plate, feta side up. Spread the mashed avo evenly on each slice and drizzle with hot honey.2 teaspoon hot honey

- Add any additional toppings you'd like and enjoy!
