Creamsicle Overnight Oats

Inspired by the classic ice cream bar, these creamsicle overnight oats are fresh and creamy! A simple make ahead breakfast, they are filled with protein and fiber to fuel your busy morning.

Nessy's Note

I'm a fruity ice cream person by nature, so it is no surprise that of all the classic ice cream bars, my favorite is most certainly a creamsicle.

So, after making my lemon overnight oats, I was thinking about what flavor I wanted to turn my base ONOs recipe into next, and this citrusy cold treat came to mind.

And I must say, I was pleasantly surprised by how well they turned out. The key is the vanilla extract so don't skip it because it brings the "vanilla ice cream" flavor to the oats rather than them just tasting orange flavored.

Ingredients and Substitutions

  • Rolled Oats- These can be called old-fashioned oats or large flake oats. I prefer their texture in overnight oatmeal so I use them in all of my recipes like blueberry overnight oats.
  • Greek Yogurt- This makes the overnight oats higher in protein without needing protein powder (like it does for the PB filling in strawberry PB toast) and provides the liquid to soften the oats.
    • Substitution: These work with any type of plain yogurt but note that protein content will vary.
  • Maple Syrup- I find that a touch provides extra sweetness and nicely complements the flavors. You can adjust depending on how sweet your orange juice is.
    • Substitution: Honey or your sweetener of choice can be used instead.
  • Orange (juice + zest)- This brings the orange flavor. I recommend using a fresh orange and including both the juice and zest so that the flavor is strong enough.
    • Substitution: Bottled juice can be used in a pinch (and the zest omitted) but the flavor is a lot better with fresh.
  • Vanilla Extract- Give the vanilla ice cream flavor element- don't skip it if you want the creamsicle vibe over just plain orange oats.
  • Chia Seeds- These thicken the oatmeal and add a some of the fiber.
    • Substitution: Ground flaxseeds can be used or they can be left out.
  • Sea Salt- A pinch balances out the flavor.

My Notes for the Best Creamsicle Overnight Oats

  • Meal prep for the week. This lemon overnight oatmeal lasts up to 4-5 days in the fridge so you can make a batch on Sunday and have breakfast ready all week.
  • Don't skip the vanilla. The vanilla extract is really important for giving the vanilla filling flavor that you find in a creamsicle. Without it, these just taste like orange flavored oats (still tasty but not what we're going for!).
  • Adjust the consistency. If the oats thicken too much overnight for your liking, you can stir in a splash of milk (or orange juice) before serving.

Creamsicle Overnight Oats

Equipment

  • 1 jar or container with lid (at least 10 oz/300mL in size)

Ingredients

  • ¾ cup plain Greek yogurt (I prefer 2% for a creamier texture but any type will work)
  • 1 and ½ teaspoon maple syrup (or honey)
  • 2 tablespoon orange juice
  • ½ teaspoon orange zest
  • ¼ teaspoon vanilla extract
  • ⅛ teaspoon fine sea salt
  • ⅓ cup old-fashioned rolled oats (large flake)
  • 1 tablespoon chia seeds (or ground flaxseed)

Instructions

  • Add the Greek yogurt, maple syrup, orange juice and zest and sea salt to your jar or container and stir well until fully combined.
    ¾ cup plain Greek yogurt, 1 and ½ teaspoon maple syrup, 2 tablespoon orange juice, ½ teaspoon orange zest, ⅛ teaspoon fine sea salt, ¼ teaspoon vanilla extract

  • Stir in the rolled oats and chia seeds until evenly mixed.

  • Let the oatmeal sit in the fridge for at least 4 hours (overnight is best for optimal texture).

  • That's all! In the morning, enjoy your filling breakfast as you get all ready for your busy day.

Notes

Storage: Store orange creamsicle overnight oats in an airtight container in the refrigerator for up to 5 days.
Warm Overnight Oats: If you prefer to enjoy your oats warm, heat in the microwave, warming in 20 seconds bursts until they reach your desired temperature. Since the recipe is made with yogurt, DO NOT overheat or they may curdle.
