Like my Peanut Butter Jelly Baked Oatmeal, this peanut butter strawberry toast takes this nostalgic favorite and gives it a couple of flavor and nutrition upgrades, like a flaxseed strawberry "jam" and a high protein yogurt peanut butter spread.
It's still quick, simple and full of the PB+J flavor we all love but with a little more staying power to help keep you full all morning.
Ingredients and Substitutions

- Sprouted Grain Bread- I like using sprouted grain bread for toast (like peanut butter honey toast) as it often contains more micronutrients, protein and fiber than other breads but use whatever you like. Note that the nutrition estimates in the recipe card are based on sprouted grain bread.
- Peanut Butter- Crunchy or smooth works.
- Substitution: You can make this toast with another nut or seed butter. (Or check out this almond butter banana toast).
- Greek Yogurt- I love the combo of peanut butter + yogurt (so much so I can just eat it all on it's own) and so I like to add a bit to the peanut butter to help add some extra protein and to make the PB layer extra thick and creamy.
- Frozen Strawberries- I usually have frozen berries on hand (so I can make things like strawberry cheesecake overnight oats) but fresh will work as well- just slice them, skip the mashing and flaxseed part of the recipe and lay the fresh berries on top of the PB.
- Substitution: This recipe works great with all sorts of frozen berries.
- Ground Flaxseed- Mixing this with the strawberry juice and letting it sit helps the liquid to gel up a bit so that it becomes more jam like in minutes (similar to a chia jam). It also adds a bit of fiber to the recipe.
- Substitution: Chia seeds (I recommend ground so that it thickens fast) can also be used or it can be left out but the strawberry layer will be a bit messier (unless you use fresh berries).

My Notes for the Best Strawberry Peanut Butter Toast
- Prep the strawberry mixture first. Letting the mashed strawberries and flaxseed sit for a couple of minutes while you prepare everything else gives it time to thicken so that it holds together better on the toast.
- Make it satisfying. Pair your toast with an extra source of protein and fiber (see some ideas in the notes of the recipe card) to turn it into a filling, balanced breakfast that keeps you full all morning long.

Peanut Butter Strawberry Toast
Equipment
- Toaster
Ingredients
- ⅓ cup frozen strawberries sliced (**see notes for fresh)
- 1 teaspoon ground flaxseed
- 1 slice sprouted grain bread * (or bread of choice)
- 1 tablespoon peanut butter
- 2 tablespoon Greek yogurt
Instructions
- Defrost the strawberries, mash lightly and mix with the ground flaxseed. Set aside (it will thicken slightly)⅓ cup frozen strawberries, 1 teaspoon ground flaxseed

- Toast the bread in the toaster to your desired doneness.1 slice sprouted grain bread

- While the bread is toasting, mix together the yogurt and peanut butter.1 tablespoon peanut butter, 2 tablespoon Greek yogurt

- Spread the peanut butter mixture evenly over the toast followed by the strawberry mixture.

- Enjoy!
