Nessy's Note

I gotta say, it is kind of a grey area when it comes to naming something an open faced sandwich. Because, isn't that basically just a piece of toast with toppings?

To help settle any debate that might arise from the name I gave this recipe, I used an English muffin as the base rather than bread (unlike this cottage cheese egg toast which is, in fact, made on bread).

After all, that is essentially synonymous with a breakfast sandwich, no?

And then, when you top it off with bacon, a fried egg and cheese, it is without a doubt an open faced breakfast sandwich (and not toast!). But whether or not you agree with me on that, surely we can agree that it is delicious and you should definitely make it.

Ingredients and Substitutions

Ingredients measured out on a plate.
  • English Muffin- Something about using an English muffin just says, "breakfast sandwich", wouldn't you agree? I used a sprouted whole grain one but you can use whatever kind you'd like.
    • Substitution: You could also make these on another type or bun or use two slices of bread (though that is bringing us closer to toast territory..).
  • Bacon- Use any type of bacon that you like. I used pork bacon and then used the grease from it to cook the eggs. If you are using a less fatty option (or leaving it out), you may need a bit of butter or cooking oil for the eggs and toasting the muffin.
    • Substitution: Feel free to make these open faced sandwich with another breakfast meat of choice such as sausage patties or ham. Or you can leave it out.
  • Eggs- I like fried eggs for this but you could scramble them if you prefer.
  • Avocado- You want one with a green centre and ripe enough to mash onto the English muffin, just like you need for Avocado Sweet Potato Toast.
  • Cheddar- Is it a breakfast sandwich without some nice melted cheese on an egg? Not in my books!
    • Substitution: This is great with all sorts of melty cheese- gouda, mozzarella or pepper jack are also really tasty.

Tips for the Best Open Face Breakfast Sandwiches

  • Break the yolk slightly. This is my trick for achieving jammy egg yolks without an overly messy sandwich. You allow the eggs to cook so that the whites are nearly set and then lightly break the yolk before topping with the cheese.
  • Use the bacon grease. In my opinion, the taste of eggs cooked in bacon fat is unparalleled and adds a lot of flavor to the sandwich!

Ingredients

  • 1 English Muffin
  • 2 eggs
  • 2 slices bacon
  • ¼ avocado
  • 1 oz white cheddar
US Customary - Metric

Instructions

  • In a skillet over medium low heat, cook the bacon until crispy. Remove and set aside, draining some grease off if there is excess but leaving some in for the remaining steps.
    2 slices bacon
    Cooked bacon in a pan.
  • Place the English muffin halves cut side down in the same pan and toast until lightly golden, about 1-2 minutes. Remove to a plate.
    1 English Muffin
English muffin toasting in a frying pan.
  • Crack the eggs into the same pan, adding some of the reserved bacon grease as needed. After about 1 minute, use a spatula to gently push the whites inward to keep them about the size of the English muffin. Cover and cook for 1-2 minutes until the whites are almost set.
Then, lightly poke the yolks to slightly break them (this gives us jammy yolks that aren't too runny to be a mess to eat). Top with white cheddar, cover and cook for one more minute. Remove from the heat and let sit, covered, for 1-3 minutes until the cheese is fully melted.
2 eggs, 1 oz white cheddar
Eggs cooked and topped with cheese.
  • Meanwhile, mash the avocado and spread it evenly over each English muffin half and then top each with 1 slice of bacon cut in half.

  • Place the eggs over the prepared muffin halves and enjoy!

Notes

Leftovers: This sandwich is best when made and eaten right away. The eggs and avocado don't hold up well once assembled, so leftovers aren't recommended.
Make Ahead: To get a head start, you can cook the bacon in advance and store it (and the extra grease) in the fridge. When ready to make, reheat the bacon and use the reserved grease (or sub oil/butter) to cook the rest.
