I'm a firm believer that eating well is all about not overcomplicating it.
Simple foods that are quick to put together often hit the spot the most. And this cottage cheese egg toast is the perfect example (as is banana chia overnight oats).
It takes just minutes to make, feels satisfying and balanced (and is a high protein way to start the day!) and tastes like more effort than it takes.
Ingredients and Substitutions

- Sprouted Grain Bread- Like in my almond butter toast, I use sprouted grain bread as it contains more micronutrients, protein and fiber than many other breads but use whatever you prefer.
- Cottage Cheese- Like in avocado cottage cheese toast, this is one of the key ingredients that adds protein along with creamy, cheesy flavor.
- Garlic Powder- I love incorporating this for a little extra flavor but feel free to leave it out.
- Eggs- A couple of fried eggs add protein and deliciousness!
- Substitution: You could opt for making your egg cottage cheese toast with eggs cooked another way such as scrambled, boiled (see my boiled egg avocado toast for how to boil an egg) or poached.
- Butter- For cooking the eggs. The flavor of eggs cooked in butter can not be beat, in my opinion.
- Substitution: Another cooking oil of choice would work.
- Fine Sea Salt- Depending on how salty your cottage cheese and butter are, adjust to taste. Table or kosher salt work too.

Tips for Cottage Cheese and Egg Toast
- Fry your eggs in butter. While you can cook them in something else, the flavor of butter is hard to beat.
- Serve right away. This toast is best enjoyed immediately while the eggs are warm and the toast is crisp.
- Don't skip the seasoning. A sprinkle of salt and garlic powder brings it all together. Add a bit more to taste if it seems bland.
- Add some veggies. If you want to add veggies to your morning, this savory breakfast is great accompanied by fresh, roasted or fermented veggies (I love it with a spoonful of kimchi!).

Fried Egg Cottage Cheese Toast
Equipment
- Toaster
Ingredients
- 2 slices sprouted grain bread * (or bread of choice)
- ½ cup cottage cheese
- ¼ teaspoon garlic powder
- ⅛ teaspoon fine sea salt plus additional to taste
- 2 teaspoon butter
- 2 eggs
Instructions
- Toast the bread to your desired level.2 slices sprouted grain bread

- Top the toasts with half of the cottage cheese, garlic powder and salt.½ cup cottage cheese, ¼ teaspoon garlic powder, ⅛ teaspoon fine sea salt

- Meanwhile, heat a skillet over medium heat.Once heated, add the butter and once melted, crack in the eggs.Cover and cook for 2-4 minutes, depending on how done you like your eggs then remove from the heat.2 eggs, 2 teaspoon butter

- Add one egg onto each of the cottage cheese toasts.

- Enjoy!
