Here at Busy Morning Breakfast, my goal is to under-complicate breakfast. As much as I love a good brunch with endless elements, on busy weekdays I just want a simple breakfast that gets the job done.
By that I mean it needs to be filling- with enough protein and fiber to keep me satisfied (and avoid that mid-morning sugar crash)- and tasty enough that I actually want to eat it (like a matcha yogurt bowl).
So, though it may seem incredibly basic, this avocado toast with hard boiled eggs is an absolute staple for a reason. It’s quick, satisfying and checks all the boxes for a balanced, feel-good breakfast you’ll want to make again and again.
Ingredient Notes and Substitutions

The amounts needed can be found in the recipe card, but here’s a quick summary of the key ingredients and substitution options:
- Bread- To make higher protein avocado toast, I like using a sprouted grain bread or a whole grain sourdough (for added fiber and protein) but you can use what you love or have on hand.
- Substitution: You could also try it on a sweet potato or on rice cakes.
- Avocado- Choose one that’s brown on the outside, gives slightly when pressed (but isn’t squishy- that's overripe), is bright green inside and mashes easily with a fork.
- Hard Boiled Eggs- I like to prepare hard boiled eggs for this recipe (this is the exact method I use). To make it even easier, many grocery stores carry pre-cooked boiled eggs and that works great here too. You can also use soft or medium boiled eggs- just note that the softer yolk can get a bit messy so you may want to mash them on top instead of slicing.
- Substitution: You can top the toast with eggs cooked a different method such as poached, fried or scrambled (or check out these scrambled eggs and avocado toast).
- Optional Toppings- I wanted to keep it as simple as possible but toppings like fresh herbs, sprouts or smoked salmon (have you tried my smoked salmon avocado toast?) would also be great.

My Notes for Avocado Toast with Boiled Eggs
- Toast your bread just right. Aim for light golden brown- firm enough to hold the toppings but still soft enough to bite easily without scratching your mouth.
- Use a ripe avocado. Choose an avocado that has darker skin and gives slightly with gentle pressure. When cut, it should be bright green and mash easily.
- Make your eggs ahead of time. This recipe is a super simple weekday breakfast if the eggs are cooked (and ideally peeled) before the morning.

Avocado Toast with Hard Boiled Eggs
Equipment

Ingredients
- 2 slices sprouted grain bread * (or bread of choice)
- ½ large ripe avocado
- 2 hard boiled eggs peeled (see below)
- ¼ teaspoon fine sea salt
- ⅛ teaspoon black pepper
Instructions
- Toast the bread in the toaster to lightly golden (so it’s sturdy enough for the toppings but still easy to bite into).2 slices sprouted grain bread

- While the bread is toasting, mash the avocado in a small bowl leaving some chunks for texture. Divide the avocado between the two slices of toast.½ large ripe avocado

- Slice the boiled eggs into ⅛-1/4 inch slices.2 hard boiled eggs

- Top the avocado toast with the sliced boiled egg. Season with salt and pepper and add any other toppings you'd like such as fresh herbs.¼ teaspoon fine sea salt, ⅛ teaspoon black pepper
