French Toast Omelet Wrap

All of the flavor you love about French Toast is rolled up into this sweet variation of the viral omelet wrap. A tortilla is cooked in a custardy egg filling and then topped with a creamy yogurt sauce and berries for an easy and satisfying breakfast.

Breakfast at a Glance

Nessy's Note

The "omelet wrap" became viral a few years ago on social media. And I do love the classic version which is usually an omelet topped with a tortilla and then folded with fillings such as avocado (like this avocado omelet), cheese and more.

But since I like to create sweet and savory swaps to recipes (like this pesto yogurt bowl), I turned the tortilla egg wrap sweet.

At first, it might seem crazy. But if you think about it, we already know eggs can taste great when they are sweet in French Toast (eggs also work great in banana cream oatmeal). So I essentially turned the French toast custard into an omelet and then cooked a tortilla in it for a high protein sweet breakfast.

Ingredients and Substitutions

Ingredients measured out in bowls.
  • Egg + Egg White- I opted for egg and egg white for extra protein but the egg whites can be replaced with an extra egg.
  • Greek Yogurt- Typically, French toast includes some milk mixed into the eggs for the custard. I chose to use yogurt as I already had it on hand for the filling and it is a bit higher protein and thicker which helps the omelet portion hold its structure.
    • Substitution: Any type of yogurt can be used. Or you can use milk but reduce to 1 tablespoon.
  • Vanilla + Cinnamon- These bring the key "French Toast" flavor and I really don't recommend skipping them in the wrap portion or in the yogurt sauce filling.
  • Maple Syrup- For a bit of sweetness.
    • Substitution: You can use your sweetener of choice (honey, sugar, etc) and adjust to taste.
  • Tortilla- I used a whole grain spelt tortilla but any tortilla that you like should work. I recommend choosing a size that matches that of the skillet you use.
  • Butter- This prevents the omelet part from sticking and in my opinion, the flavor of butter with eggs (like in these milk-less scrambled eggs) can't be beat.
    • Substitution: Another cooking oil of choice such as coconut oil will work.
  • Fillings: I used the following as the filling as they taste really complementary to the flavors of the wrap and they add some extra protein (from the sauce) and fiber (from the jam). But you can experiment with different filling ideas!
    • Almond Butter Yogurt Sauce- You could also try making this with peanut butter.
    • Berries + Ground Flaxseed Jam- Feel free to sub this out with other fruits or to use chia seeds instead of flax.

My Notes for the Best French Toast Wraps

  • Use a non-stick skillet. In order for the wrap to hold its shape when flipping, it is essential that the eggs do not stick. You can use a non-toxic non-stick, properly preheated stainless steel or well seasoned cast iron.
  • Don't skip the filling. While the flavor of the omelet wrap is pretty good on its own, the fillings are what turn this into a breakfast you'll be excited to wake up for. Feel free to experiment with other fruits, etc.
  • Cover while it cooks. Until you flip it, keep the omelet wrap covered to speed up and ensure even cooking of the top and bottom.
  • Add the wrap immediately. The first few times I made the viral omelet wrap, I made the mistake of adding the tortilla after the eggs were partially cooked and it did not hold together well. So, pour in the egg mixture and then add the wrap directly on top.

French Toast Wrap

Ingredients

  • 1 egg
  • ⅓ cup egg white
  • 2 tablespoon Greek yogurt
  • ½ teaspoon vanilla extract
  • ½ teaspoon maple syrup
  • ½ teaspoon cinnamon
  • 1 tortilla
  • 1 teaspoon butter

Yogurt Filling

  • ¼ cup Greek yogurt
  • 1 tablespoon almond butter
  • 1 teaspoon maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon

Flaxseed Jam

  • ¼ cup mixed berries frozen and defrosted
  • 1 tablespoon ground flaxseed

Instructions

  • Start by whisking together the flaxseed jam ingredients and set aside so it has time to thicken.
    ¼ cup mixed berries, 1 tbsp ground flaxseed

  • In a bowl, whisk together the egg, egg whites, Greek yogurt, vanilla, maple syrup, and cinnamon.

  • Heat a nonstick pan over medium heat and melt the butter. Add the egg mixture followed by the tortilla on top. To add the tortilla, dip it and then flip it over so that the outside has a light coating of the egg mixture as well.

  • Meanwhile, mix together the yogurt filling ingredients.
    ¼ cup Greek yogurt, 1 tbsp almond butter, 1 tsp maple syrup, ½ tsp vanilla extract, ¼ tsp cinnamon

  • After about 5 minutes, once the wrap is cooked, flip it over for 30 seconds to crisp up the outside and then move to a plate. Spread the yogurt filling over the center, then spoon the flax jam on top.

  • Fold and enjoy (it's a bit messy so best eaten with a fork and knife!).

Notes

Make Ahead: You can prepare the flax jam and yogurt filling mixtures up to a couple of days ahead of time and store them in the fridge.
Leftovers: This is best enjoyed fresh and I do not recommend leftovers as they will get soggy.
