Whenever you want to feel fancy with your weekday breakfast but don't want to add any extra time or effort, this pesto egg toast is just what you need (though smoked salmon avo toast also fits the bill).

Ingredients and Substitutions

- Pesto- Since there are so few ingredients in this recipe, a good quality pesto is really important. I like to make this bowl with basil pesto but it would be fun to experiment with another type (like this sun-dried tomato pesto).
- Greek Yogurt- Mixing a bit of pesto into plain Greek yogurt is so delicious (it's the base for this savory yogurt bowl) and is the perfect spread for the bread.
- Substitution: Another yogurt would work or you can leave it out (but I highly recommend using it!).
- Sprouted Grain Bread- As with my peanut butter honey toast, I like using a sprouted grain bread or a whole grain sourdough (for added fiber and protein) but you can use what you love or have on hand.
- Eggs- You can't make pesto egg toast without 'em!
- Salt- Depending on how salty your pesto is, you made need to add a bit to taste.

Notes for the Best Pesto Egg Toast
- Don't skip the pesto yogurt layer. Sure you could just pile your pesto eggs on buttered toast but the pesto yogurt adds a creamy boost of flavor plus some extra protein.
- The eggs take time. Cook them over medium heat and cover with a lid so that they set on the top without burning the pesto.
- Don't skimp on the pesto. Using enough ensures the eggs are flavorful and also helps the eggs not to stick.

Pesto Egg Toast
Equipment
- Toaster
Ingredients
- 2 tablespoon + 1 teaspoon pesto
- ΒΌ cup Greek yogurt
- 2 slices sprouted grain bread * (or bread of choice)
- 2 eggs
- salt to taste
Instructions
- Mix together the Greek yogurt with 1 teaspoon of pesto. Set aside.2 tablespoon + 1 teaspoon pesto, ΒΌ cup Greek yogurt

- Toast the bread to your desired level.2 slices sprouted grain bread

- Heat a skillet over medium heat.Once heated, add the pesto in two 1 tablespoon mounds and crack the eggs onto each mound.2 eggs, 2 tablespoon + 1 teaspoon pesto

- Cover and cook for 2-4 minutes, depending on how done you like your eggs then remove from the heat.
- Top the toasts with half of the yogurt mixture each followed by one egg each.

- Season with salt to taste and enjoy!salt

This was so delicious! I love the pesto yogurt sauce in the toast π
