Scrambled eggs and avocado toast is like the ultimate breakfast power couple. (Weekday scrambled eggs, meet my friend, avocado toast).
While it might be underestimated for its simplicity, it's one of those meals you just may keep on repeat.
Easy enough for a busy morning, it packs a balance of protein, fiber, healthy fats and deliciousness to keep you fueled and satisfied for the day ahead.
Ingredient Notes and Substitutions

The amounts needed can be found in the recipe card, but here’s a quick summary of the key ingredients and substitution options:
- Bread- As I say in making higher protein avocado toast, I like using a sprouted grain bread or a whole grain sourdough (for added fiber and protein) but you can use what you love or have on hand.
- Substitution: You could try it on a sweet potato or on rice cakes.
- Avocado- You want one that’s brown on the outside, gives slightly when pressed (but isn’t squishy- that's too ripe), is bright green inside and mashes easily with a fork.
- Eggs + Butter + Salt- These three ingredients are all you need to make my go to easy scrambled eggs!
- Substitution: You could try a flavored variation of scrambled eggs- salsa scrambled eggs or smoked salmon scrambled eggs would both be incredible. You could also opt for eggs cooked a different way such as poached or boiled (like this boiled egg avocado toast).
- Optional Toppings- I kept the recipe as simple as possible but toppings like sliced spring or red onions, fresh dill, sprouts, red pepper flakes or hot honey (have you tried my hot honey avocado toast?) would also be great.

My Tips for the Best Scrambled Eggs on Avocado Toast
- Toast your bread just right. We want to aim for light golden brown- firm enough to hold the toppings but still soft enough to bite easily without scratching your mouth.
- Use a ripe avocado. Choose an avocado that gives slightly with gentle pressure and has a darker skin. When cut, it should be bright green and mash easily.
- Don't rush the eggs. Scrambled eggs can taste rubbery when they are cooked on too high of a heat (but if you want a more forgiving recipe, try making my Greek yogurt scrambled eggs).
I highly recommend making it just before you plan to eat it as it is quick to make and both avocado toast and scrambled eggs taste best when fresh.

Scrambled Eggs Avocado Toast

Ingredients
- 2 slices sprouted grain bread * (or bread of choice)
- ½ large ripe avocado
Scrambled Eggs
- 2 eggs
- 2 teaspoon butter
- ¼ teaspoon fine sea salt
Instructions
- Toast the bread in the toaster- aim for just lightly golden so it’s sturdy enough for the toppings but still easy to bite into.2 slices sprouted grain bread

- While the bread is toasting, mash the avocado in a small bowl leaving some chunks for texture. Divide the avocado between the two slices of toast.½ large ripe avocado

- Cook the eggs. Heat a small saucepan over medium low heat and add the butter. Once melted, crack the eggs straight into the saucepan (or in a bowl first if you're worried about shells). Use a spatula to gently stir and fold the eggs as they cook, breaking the yolks as you go.Continue to stir often and cook the eggs for 3-4 minutes until they are nearly cooked to your desired level of doneness. Remove from the heat and season with salt.2 eggs, 2 teaspoon butter, ¼ teaspoon fine sea salt

- Top the toasts with the scrambled eggs and any other toppings you'd like such as fresh herbs or red pepper flakes.
