Sweet potato toast was a major trend a few years ago and so I'm just a little behind what’s cool (I was a bit late to trying out avocado cottage cheese toast, too). But, I think this one deserves to be brought back into the spotlight.
It’s the kind of breakfast that checks all my busy morning boxes because it's simple, versatile and make-ahead friendly.
Plus, it’s a delicious way to sneak in a veggie first thing in the morning (which can definitely feel like a stretch on a busy weekday).
Once you’ve got a batch of sweet potato "toasts" prepped, all that’s left to do is pop a couple in the toaster and load it up with whatever toppings you’re in the mood for. See below for my favorite ideas!
Ingredients

- Sweet Potatoes- These are the whole key to the recipe so keep the following in mind:
- I prefer to use orange-fleshed sweet potatoes but have found the results are pretty good with white-fleshed sweet potatoes as well. I haven't personally tried any other colors.
- Look for medium-sized sweet potatoes with a relatively uniform shape for more evenly sized slices.
- Avoid ones with soft spots or discolorations and if the one you are using has them, be sure to trim them off.
- You don't need to peel them (though you can if you want) but you should give them a good scrub before slicing.
- Toppings- The possibilities are endless! See the full list of topping ideas below to get inspired.
How to Make It

1. Prepare the sweet potato. Scrub and dry the sweet potatoes well and slice them lengthwise into ¼ to ½ inch thick slabs, depending on your preference.
If your sweet potato is large, you can also slice them into rounds to make it easier.

2. Bake. Place the slices in a single layer on a parchment or silicone-lined baking sheet. Don't skip the lining as the potatoes are not oiled and will stick!
Roast for 25–30 minutes until the slices are tender.

- Serve. Top with your desired toppings and enjoy!

- Or Store. Let cool on a wire rack and then store in an airtight container in the fridge for up to 5 days.
Meal Prep, Make Ahead + Storage Tips
Sweet potato toast is perfect for prepping ahead! Bake a batch at the start of the week and prep some toppings to make assembly quick for your busy mornings.
To Store: Once baked, transfer slices to a wire rack to cool completely. (If you package them before they are cooled, they can end up being a bit soggy and unable to hold their "toast" shape.)
Store cooled slices in an airtight container in the refrigerator for up to 5 days.
To Reheat: Reheat slices in a toaster until warmed through and slightly crisped. Or, if you don't mind them being a bit softer, you can simply warm them in the microwave.

Sweet Potato Toast Toppings
Sweet potato toast is quite versatile so if you’d put it on regular toast, chances are it’ll be great on sweet potato toast! A few of my favorite toppings are:
- Eggs- Try it with a fried egg (like my fried egg sweet potato toast) or with soft scrambled eggs (such as these pesto scrambled eggs).
- Avocado- You can use sweet potato toast in place of regular toast in most of my avo toast recipes like this smoked salmon avocado toast or boiled egg avocado toast. I also have a sweet potato avocado toast recipe.
- Nut butter + Fruit- Like a twist on a PB&J, try it with peanut butter and banana or almond butter with berries.
- Hummus + Veggies- Spread some of your favorite hummus on top along with leftover roasted veggies for a savory Mediterranean inspired breakfast.

My Tips for Sweet Potato Toast
- Line your baking sheet. The recipe is made without oil and so the sweet potatoes will stick to the baking sheet if it is not lined with either a silicone liner or with parchment paper.
- Slice evenly. Aim for even slices (between ¼ and ½ inch thick) so they cook in the same time.
- Pick a good sweet potato. Look for one that’s long, relatively straight and not full of soft spots or blemishes.
- Cool on a wire rack. After baking, let the slices cool on a wire rack rather than stacking them or leaving them on the pan to help prevent sogginess.
