This cottage cheese avocado toast might sound simple (like avocado toast with hard boiled eggs) but that's what makes it incredible. Creamy, tangy and packed with protein- it'll help keep you feeling full and satisfied.
Ingredients and Substitutions

- Bread- When making higher protein avocado toast, I like using a sprouted grain bread or a whole grain sourdough (for added fiber and protein) but you can use what you love or have on hand.
- Substitution: To make this without bread, you could try it on sweet potato avocado toast or on rice cakes.
- Avocado- We want a ripe avocado so use one that is brown on the outside, gives slightly when pressed (but isn’t squishy which is too ripe), is bright green inside and mashes easily with a fork.
- Cottage Cheese- I recommend using a good quality full-fat or 2% cottage cheese for the best texture and flavor.
- Substitution: I don’t recommend substituting for the cottage cheese in this recipe but if you want to try a different cheesy variation, check out my feta avocado toast instead!
- Seasonings- I kept it simple with salt, pepper and granulated garlic but red pepper flakes or everything bagel seasoning are also great.
- Optional Toppings- There are endless ways to dress this toast up- you could try adding an egg for extra protein, smoked salmon (for a lox and cream cheese-inspired twist on this smoked salmon avocado toast), fresh herbs like chives or dill or a drizzle of hot honey for a sweet-salty vibe (so good!).

My Notes for the Best Cottage Cheese Avocado Toast
- Toast the bread to lightly golden. You want it sturdy enough to hold the toppings but still soft enough to easily bite into- think crisp edges but not a crouton.
- Use a ripe avocado. It should give slightly when you press it but not feel mushy.
- Mash the avo and cottage cheese together. Mixing them before spreading makes for easier assembly (which we're all about on our busy mornings!).

Cottage Cheese Avocado Toast

Ingredients
- 2 slices sprouted grain bread * (or bread of choice)
- ½ large ripe avocado
- ½ cup cottage cheese
- ⅛ teaspoon fine sea salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon granulated garlic (optional)
Instructions
- Toast the bread in the toaster until it is just lightly golden so it’s sturdy enough for the toppings but still easy to bite into.2 slices sprouted grain bread

- While the bread is toasting, mash the avocado with the cottage cheese and seasonings in a small bowl with a fork, leaving some chunks for texture.½ large ripe avocado, ½ cup cottage cheese, ⅛ teaspoon fine sea salt, ⅛ teaspoon black pepper, ⅛ teaspoon granulated garlic

- Split the mashed avocado mixture between the toasted slices and spread it on top.

- Add any additional toppings you'd like and enjoy!
